We’re about to roll into the season of BBQ’s, picnics and lots of outside fun time!! I’m sharing a super easy and delicious pasta salad you can bring along with you for any events you have coming up this summer that’ll totally WOW your guest!
I made this for our Duffy boat ride we took out last Sunday for Mother’s Day and it was a total hit! It’s easy to pack & feeds a whole family!
Pasta Salad Recipe
Ingredients:
1 – 12oz bag of Vegetable Radiatore Italy Organic Pasta
1 chopped red bell pepper
1/2 cup chopped red onion
1/4 cup chopped green onion
1/4 cup of sun-dried tomatoes
1/4 cup capers
1 cup of feta cheese
1 cup of sliced olives
4 chopper persian cucumbers
2 cups of chopped broccoli
1/2 cup of ranch
1/2 cup of cilantro dressing
Season with salt, pepper, and red pepper flakes.
Directions: Prepare pasta and store in the fridge until cool. (I usually make it the night before.) Chop all vegetables and toss with pasta. Add dressing, mix & chill. Serve chilled or store in fridge for up to 3 days. Enjoy!
