Bow Tie Spinach & Artichoke Pasta

We recently spent the weekend at the cabin. It’s one of my favorite times to cook and what sounds better than pasta on a cold rainy night?! We are in the heart of the mountains surrounded by wild life, fresh trees and skyline views. One of my favorite things to do when up at the mountains is go for walks with Stella Bella!! Justin and I always end our trip with a walk up to one of the local skyline views. It’s truly is such a fun and peaceful getaway spot!! Hope everyone had a fabulous weekend!!!

Bow Tie Chicken, Spinach & Artichoke Pasta Recipe:

Crockpot Chicken:

2 chicken breasts

1 cup of chicken broth

1/4 tsp garlic salt

1/2 pepper

1/2 paprika

Cook on low for 4-5 to hours. Once chicken is done, shred and set aside. I like to cook chicken in crockpot the day before or if time allows, the same day.

Spinach Artichoke Pasta Recipe:

1 14oz can Artichoke hearts

1/2 bag of fresh spinach

1 12oz bag  bowtie pasta

1/2 shallot grated

4 garlic cloves chopped

1/2 tsp of red pepper flakes

1/2 tsp garlic salt

2 tbs olive oil

8oz cream cheese

1 cup of milk

1 cup of Parmesan, Shredded

1 cup of sour cream

1/2 cup of chick broth

S&P to taste

Directions: Cook pasta, set aside. Sauté the garlic & shallots with olive oil until fragrant. On low heat, add spinach and artichoke hearts. Then add cream cheese, once melted add spices, sour cream, milk and chicken broth. Once well melted, add parmesan. Then add chicken. Combine everything and enjoy!!
