Carrot & Zucchini Breakfast Muffins

Ingredients 

1 cup all purpose flour

1 1/2 cup whole wheat flour

1/2 cup rolled oats

1 1/2 cup sugar

1 tbs baking powder

1 1/2 tsp ground cinnamon

1 tsp salt

4 eggs

3/4 coconut oil

1 cup grated zucchini

1 cup grated carrot

3/4 orange flavored cranberries

Instructions 

  1. Preheat oven to 350 degrees.
  2. Mix dry ingredients in large bowl. In an electric mixer, whisk eggs and oil. Stir in grated zucchini and carrots. Add dry ingredients starting with the sugar, followed buy the flour, oats, baking powder and cinnamon.

Tips: Mix all dry ingredients together before pouring into the mixture. Orange flavored cranberries can be found at Trader Joes.
