Heart Warming Winter Soup

This is what I like to call the “Heart Warming Soup” because it’s perfect on a cold day, filled with plenty of nutrients & also a great little detox meal after all the heavy holiday food & sweets. I think of this as my flat tummy soup! I like making this when I feel like eating something light & need more veggies.  It’s so healthy, full of antioxidants & very rich in flavor.  I like to make this at least once a month during the winter season. I feel that eating a balanced diet, along with exercise, helps support an overall happy and healthy lifestyle. Hope you enjoy this recipe!

Ingredients: 

1/2 onions

1 Tbsp EVO

salt & pepper to taste

1/2 tsp of crushed red pepper

dash of celery salt

1/2 tsp of garlic salt

2 cups shredded carrots

2 cups of chopped kale

1 1/2 cup of chopped cabbage

1 1/2 cup of fingerling potatoes

4 sausage links

3 cups of chicken stock

1 cup of water

Directions: 

Saute onions, carrots & add spices.  After 5 minutes add sausage links (remove skin & chop into bite size chunks). Cook until sausage is fully cooked, about 15-20min. Once sausage is cooked, chop and add fingerling potatoes and sauté for another 10 minutes. Once thats done, add chicken stock and simmer for another 15 minutes. Add cabbage, kale, and simmer for another 5 minutes. Enjoy!

* Store leftovers in the fridge for up to 3 days.
