Easter Egg Cupcakes

These cupcakes are the perfect festive treat to enjoy this Easter Sunday! They are also super fun for any spring parties you may have coming up.  See below for the recipe to make these delicious cupcakes. Enjoy!

Chocolate Cupcake:
1 Chocolate Cupcake Mix (follow directions on box)
1 box of Hershey White Chocolate Instant Pudding (you can use chocolate or vanilla too)

(Bake as directed in a cupcake pan. I picked up these cute cupcake liners at Michaels.)

Homemade Cream Cheese Frosting:

1 box of room temperature cream cheese
2 cups of powdered sugar
½ tsp of vanilla
Use an electric mixture, start with cream cheese, add powdered sugar and vanilla. Mix 3-4 min on low or until creamy.

Green Grass Topping:
1 cup of shredded sweetened coconut
7 drops of green food coloring
Place coconut in a sandwich bag, add droppings and shake until coconut is green.

Easter Egg Topping:
1 10oz of mini egg (Cadbury)
Alternate, by placing 1-3 eggs on each cupcake.

Start by icing each cupcake with the cream cheese frosting. I like to place frosting in the fridge 20-30 min before using. Once cupcakes are iced, place a pinch of the green grass topping and place Cadbury chocolate eggs on top of grass. Enjoy!
