Thanksgiving is just days away which means it’s time to start prepping for the big day. Every year, Mom and I slave away cooking our favorite traditional dishes we’ve made for years! My mom’s always cooking the most amazing Thanksgiving dinner and it’s a time of the year we both look forward to. In addition to assisting my mom in the kitchen, I always enjoy making a beautiful tablescape for our family dinner with fresh flowers from Trader Joe’s. Today I’m sharing one of Mom’s most popular Thanksgiving dinner dishes today which is her Sweet Potato Casserole. She’s made this ever since I can remember and it’s always a hit! It’s the perfect blend of sweet and crunchy – a sweet potato mash with a brown sugar glazed corn flake topping. Below you’ll find the recipe of one of our family favorites:
Ingredients
5 yams
1/2 to 1 cup of milk (start with 1/2 cup first, add extra milk if needed)
1 cup of brown sugar
2 sticks of butter
2 cups of corn flakes
Directions
Preheat oven to 350.
Sweet Potatoes:
1. Boil yams for 30-45min until you can break them with a fork
2. Drain water. Using a mixer, add milk and yams. Mix until smooth.
Corn Flake Topping
1. Melt 2 sticks of butter on low.
2. Add 1 cup of brown sugar and stir on low for consistently until creamy (about 5 min).
3. A little at a time, add the corn flakes.
4. Toss with sauce until evenly coated.
5. Turn stove off & set aside.
Once you’ve done both these steps, in a large baking dish pour the sweet potatoes and using a spatula, smooth out until even. Then pour the corn flake topping over the sweet potatoes. Cook for 25 min in oven, then enjoy!
