Peruvian Style Chicken Saltado

Tonight was my first night back at Pure Pilates in a while & it felt so good! I worked up an appetite and left with a craving for Chicken Saltado. It’s a Peruvian style cuisine, inspired by one of my favorite restaurants near the salon called Inka Grill. Lets just say it was Yum Yum!! Check out this easy recipe below!!

Ingredients

1 onion – thinly sliced

1 tomato – thinly sliced

1/2 lime

3 green onion -chopped

1 lb chicken -chopped to bite size

1 can of white beans

3 tbs oil

3 tbs soy sauce

1 tbs worcestershire sauce

3 tbs red wine vinegar

1 tsp of red pepper flakes

1/4 cup of water

S&P

Serve with

1 cup of french fries

1/2 cup of white rice

 

Directions:

  1. Marinate chicken in the soy sauce, worcestershire sauce, red wine vinegar, & lime for 15 min.
  2. In a pan over high heat, add meat & remaining sauce for about 10 minutes.
  3. Add beans, chopped vegetable and cook everything for another 10-15 minutes until chicken is cooked.
  4. Serve over french fries and white rice. Enjoy!
