Power House Lunch Bowl

Hey Friends! Today’s lunch was inspired by my latest post: Tips on Balancing a Healthy & Active Lifestyle http://m0q.1cc.mywebsitetransfer.com/4377-2/. I was feeling in need of some nutrients today especially after a long weekend. When I eat healthy, I hands down have more energy, am more productive and all around feel better throughout the day. Prioritizing my meal time and meal prep is crucial in order to be efficient with my busy schedule throughout the week.

Here is the easy recipe to make this powerhouse lunch bowl. This is full of fresh, raw and organic veggies. This would be a great meal prep option for an office lunch, beach day or even a fun Sunday afternoon lunch at the house.

** You can use just about any of your favorite veggies here. This is a mix of my favorite fresh and crunch veggies which is another reason packing this to go is great! It’ll stay good even 1-2 days after making.

Ingredients:

1 Handful about 1/4 cup of organic carrots, cucumber, grated carrots, bell peppers, cauliflower rice, shaved Brussels sprouts

1/2 tsp of olive oil

2 Tbsp of Roasted Bell Pepper Hummus

1/2 tsp of garlic

1/2 fresh lemon

1 pita bread

salt & pepper

Directions

  1. In a pan, sauté olive oil & chopped garlic on medium for 3 min.. Then add cauliflower rice & shaved Brussels sprouts.
  2. In a serving bowl, place roasted bell pepper hummus in the middle. Chop veggies and place around the hummus. Then add cauliflower rice & shaved Brussels sprouts. (You can eat them served hot or cold. So if you’re meal prepping, I would still sauté first.)
  3. Cut your pita bread into 4 and use to eat with your veggie and hummus plate.
